Combine yeast and warm water in a bowl. Allow the yeast to activate for 1-2 minutes. Add the honey, dark brown sugar, salt, and black pepper to the bowl and mix well.
Stir in the flour gradually, about ½ cup at a time, into the mixing bowl.
Dust your work surface lightly with flour. Place the dough onto the surface and knead for 4-5 minutes until soft.
Lightly coat a bowl with olive oil. Divide the dough into two pieces and form into a ball. Place the pieces of dough into the bowl. Cover and allow dough to rise in a warm area for 30-45 minutes.
On a lightly floured surface, remove one piece of dough at a time; fold the dough into its center before proceeding to roll it out. Roll the dough into rounds – or desired shape.
Heat olive oil in a skillet to medium heat. Cook each side of the flatbread for 3-4 minutes. Remove the cooked flatbread and repeat with the other piece of dough.
